American Hackleback is the smallest of the freshwater sturgeons native to the United States. The wild-caught Hackleback caviar is often referred to as American Wild Sturgeon Caviar and has a more affordable price point than many other sturgeon caviars, making it a great caviar for first-timers. Hackleback’s eggs have all of the highly praised qualities of other, true sturgeon roes: nuttiness with hints of sweetness, a buttery finish, and a creamy texture. The eggs are smaller than those of Sevruga caviar and range in color from dark gray to jet black. Hackleback Caviar’s delicate texture allows for them to pop on the palette, and it is renowned among connoisseurs for its rich and nutty taste. Its popularity has made it the number one choice for many highly-rated chefs.
