Kaluga Imperial Gold caviar is a farm-raised hybrid of the Kaluga (Huso dauricus) and Amur (Acipenser schrenckii) sturgeons. The caviar is harvested only when the sturgeon is mature and the eggs are at their peak to ensure that it will be at its best quality, size, flavor, coloring, and texture. The pearls are large and firm, ranging in tones from light to rich and warm browns. This caviar's taste is best described as bold and nutty with a smooth finish.
